Kasumi Kuro combines the aesthetics of both the original Damascus and hammered series of knives. High carbon molybdenum vanadium steel is used for the core material, with 32 layers of Damascus steel protecting the core metal which is hardened to 58 Rockwell. These knives feature a handle made of sturdy black – also where the name originated, Kuro meaning black in Japanese – laminated, reinforced wood and have an octagonal shape, giving it a finish that is both durable and luxurious.

A nakiri is a specialized Japanese knife designed specifically for chopping, slicing, and dicing produce. Designed with a flat, rectangular blade and a blunt tip, this knife allows for clean, precise cuts without needing the back-and-forth rocking motion of a chef’s knife.

Features:

  • Made of molybdenum vanadium steel
  • Damascus patterns of 32 layers
  • Hammered finish prevents food from sticking
  • Easy grip octagonal handle, made of a sturdy black laminated reinforced wood
  • Made in Seki Japan

Nakiri Knife 6.5" / 16.5cm

Kasumi which means “mist”, refers to the haze or cloudy look of the soft iron body of the blade, which provides contrast to the high gloss appearance of the carbon steel. Skilled Japanese Craftsmen forge Kasumi knives by joining a piece of soft iron with a piece of carbon steel. After forging, hammering, and shaping, the carbon steel becomes the blade’s edge, while the softer iron portion becomes the body and spine of the blade. The end result is an extremely sharp Kasumi knife that is both easy to sharpen and holds a sharp edge longer.

Kasumi Tora knives are handmade by knife-making specialists and crafted in the same manner as traditional Japanese swords. The knife is carefully finished, piece by piece, throughout its process by the handwork of skilled craftsmen.
